According to the Celiac Sprue Association, it is the most common genetic autoimmune disease in the world, and it’s estimated to affect at least 1% of the worldwide population. In the US over 3 million people may have it, but only a very small number have been diagnosed. It’s been linked to foods that contain “gluten” that triggers the immune response and causes a variety of medical problems.
